Fairmont Scottsdale Princess – a beautiful, relaxing oasis in the desert. Some people thought I was crazy when I said I was going to Arizona in the middle of summer, but this resort makes you feel like you are in a paradise and forget the heat!
We were lucky to stay in one of their new Sunset Beach rooms which were designed by a local interior designer utilizing design elements that Scottsdale home owners are seeking in their homes, so you will see tile work, separate double sinks, and beautiful textiles.
There is a plethora of things to do for guests of all ages so don’t expect to ever be bored. This resort caters to the golfer, the foodie, the spa-goer, the pool-loving family, the romantic getaway couple, and more.

6:30am – Wake Up & Enjoy Coffee on Your Terrace
Nothing better than waking up in a beautiful room and starting your day with a good cup of joe outside. I personally like to get up early when it’s still quiet out to ease into my morning. Staying in one of the new Sunset Beach rooms, we loved watching the sunrise over the Sunset Beach pool.
7:30am – Breakfast at Ironwood American Kitchen
Ironwood American Kitchen has something for everyone and includes fresh, local ingredients. Try one of the healthy dishes curated by Well & Being Spa or indulge in heartier fare like Huevos Rancheros or Brioche French Toast! The mixture of pumpkin, beans, avocado, and crunchy corn nuts (such a texture game changer!) made the Southwest Heirloom Bean Bowl a favorite of mine.

9am – Aerial Hammock Yoga Class at Well & Being Spa
Aerial hammock yoga is unlike any other workout you’ll ever experience, and it is fun. You are guided through a series of poses utilizing the fabric hammock suspended from the ceiling for an hour long class (with time for photo ops at the end too!) This class is great for everyone, regardless of fitness level and yoga experience. Don’t let it intimidate you!

10:30am – Pool Hopping Begins at the Princess Pool
Although kids are allowed at the Princess Pool, it has a much more adult vibe than the Sonoran Pool so I think it’s the perfect place to start. Grab a lounge chair or one of the bed lounges around the pool to catch some rays!
12pm – Lunch and a Dip at the Sunset Beach Pool
The newest addition to the Fairmont Scottsdale’s collection of pools, the Sunset Beach Pool makes you feel like you’re at the beach in the desert! Complete with cabanas, a sandy beach area, and activities for kids & adults alike, it’s a great place to hang out for the day (plus they have dive-in movies and a taco stand at night during the summer). The Well & Being Spa “Healthy Cuisine” menu is served at all of the pools on property, so no need to worry about finding your healthy fix.
What to order: Kitchen Sink Salad (regular menu) or the Three Quinoa Crab Cakes (healthy cuisine menu)
2pm – Relaxation at the Well & Being Spa Rooftop Pool and Relaxation Areas
The Well & Being Spa Rooftop Pool is my favorite at the Fairmont because of its smaller and more luxurious feel. The oversized floating bean bags in the pool are a fun touch and cabanas are first-come first-serve and complimentary. I LOVED the Arizona Fire & Ice drink with organic vodka + prickly pear (their specialty!) + lemonade + jalapeno. Make sure to head into the spa afterwards to take in their steam rooms and saunas and unwind in their eucalyptus-scented room!

4:45pm – Take a Short Walk Around the Property
The Fairmont Scottsdale Princess is stunning and really captures that southwestern desert vibe. Take a leisurely stroll to your first stop on your “dine-around” for the evening before you start indulging in the delectable cuisine and craft cocktails!
5pm – Drinks & Appetizers at Bourbon Steak
The dark and intimate lounge at Bourbon Steak invites you in to your first stop on your “dine-around” evening. The dark leather booths and wood finishings are sophisticated and masculine and begs you to sip an old fashioned in them. The bartender helping us out was knowledgable and guided us to pick the best choices on the menu. I came here expecting to mostly enjoy just the cocktails (hey, I’m an old fashioned girl can you blame me?), but this truly was some of the best food I’ve eaten in awhile.

What to order: Old Fashioned, Sazerac, One of their Seasonal Cocktails, Duck Fat Fries, Tuna Tartare, Avocado Crostini, & Roasted Broccoli with Soy Caramel + Peanuts
6:30pm – Sushi & Rum Cocktails at Toro
Take in the expansive views of the TPC Scottsdale golf course at the next stop on your dine-around, Toro. Colorful cocktails and creative sushi rolls are the stars of the menu here and makes for the perfect fresh dishes after Bourbon Steak. The Seared Salmon Roll has a smoky flavor and is easily the best sushi roll I have had in my life.
What to order: Rainbow Tropical Roll & Seared Salmon Roll and any of the rum drinks
8:30pm – Tableside Flaming Mexican Coffee at La Hacienda
The perfect way to get towards the end your culinary journey of an evening is with a flaming Mexican coffee from La Hacienda. They wheel out a cart and put on a little show making your coffee tableside. They have a few different options to choose from, but since I am lactose-intolerant we went with coffee + Frangelico which was amazing. Order some churros while you’re at it too!

10pm – Nightcap at The Plaza Bar
End the evening with one last cocktail at the Plaza Bar located in the heart of the hotel. The raised bar lit up at night is stunning and the various lounge seating surrounding the bar is equally chic yet welcoming.
